Soupe au Pistou (Vegetable Soup with Basil, Tomato, and Garlic)


  • Yield: 8 cups 1x

Ingredients

Scale
  • 1 cup dried navy or cranberry beans or 1 can navy beans
  • 3 medium yukon gold potatoes (diced into 1/2 inch cubes)
  • 1/2 pound green beans (cut into 2 inch pieces)
  • 1 medium onion (chopped)
  • 1 large yellow squash (diced)
  • 1/2 tbs salt
  • 1 cup Pistou (See recipe link below)

Instructions

  1. If you are using dried beans, cook before preparing soup.
  2. In a large pot, cover the vegetables with 8 cups salted cold water and bring to a boil quickly, then simmer for 45 minutes.
  3. Then add cooked beans, and simmer for 15 more minutes.
  4. When the soup is ready, mix in the pistou and cover the pot.
  5. Let stand for 1-2 minutes, then serve.
