Texas Grits Casserole

Ingredients

Scale
  • 1/2 cup grits (uncooked)
  • 2 cups water
  • 1/2 tsp salt
  • 1 tbs oil/butter
  • 1/3 cup red bell pepper (finely chopped)
  • 1/3 cup onion (chopped)
  • 1/2 cup sharp cheddar cheese (grated)
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp cumin (ground)
  • 1 cup greens of choice (chopped)
  • 2 medium eggs
  • 1 cup milk

Instructions

  1. Preheat the oven to 350 degrees.
  2. Boil the water and add grits and salt.
  3. Simmer for 6 minutes.
  4. In a sauté pan, sauté peppers, onions, and greens in the oil/butter.
  5. Add the chili powder, cumin, and garlic powder and cook until onions clear.
  6. Add to the cooked grits.
  7. In separate bowl or measuring cup, mix together the milk and eggs, then add to the grits.
  8. Add the cheese and mix all ingredients well.
  9. Pour into a 2-quart casserole dish.
  10. Bake for 45 minutes or until center is firm.
