Beef in Toasted Coconut

  • Yield: 4 1x




  • 4 cloves garlic (peeled and minced)
  • 1 medium lemon rind (grated)
  • 2 tsp fresh ginger (minced)
  • 2 tsp cumin (ground)
  • 1/2 tsp turmeric (ground)
  • 1/2 tsp salt
  • 1/2 + 1/2 cup broth or coconut milk
  • 1/2 pound beef (thinly sliced in small pieces)


  • 1/2 cup unsweetened coconut (shredded or flakes)
  • 3 medium green onion (cut into thin strip)
  • 1/2 small onion (cut into small pieces)
  • 1/2 medium red bell pepper (cut into strips)
  • 10 medium mushrooms (sliced in half)
  • 1 medium carrot (sliced)
  • 1/4 cup almonds (slivered, toasted)



  1. Slice the beef thinly and flatten with a meat mallet.
  2. Combine the garlic, lemon rind, ginger, coriander, turmeric, and 1/2 cup of coconut milk in a bowl.
  3. Add the beef slices and toss well to coat.
  4. Leave to marinate at least 1 hour.


  1. Heat the remaining coconut milk in a frying pan.
  2. Add the beef and vegetables and stir-fry until brown.
  3. Add the coconut and green onions and stir-fry for 1 minute or until bown.
  4. Serve with steam rice.
  5. Top with toasted coconut and toasted almonds before serving.
