Moroccan Carrot Salad


  • Yield: 4 cups 1x

Ingredients

Scale
  • 2 cups carrot (grated)
  • 1/4 cup raisins or sultanas (golden raisins)
  • 2 tbs fresh mint or cilantro (chopped)
  • 2 tbs olive oil
  • 1 1/2 tbs fresh lemon or lime juice
  • 1/2 tsp honey
  • 1/2 tsp cinnamon (ground)
  • 1/4 tsp cumin (ground)
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp red pepper (ground)

Instructions

  1. In a large bowl, toss together the carrots, raisins, and mint or cilantro.
  2. In a small bowl, stir together the remaining ingredients.
  3. Pour the dressing over the salad and toss to combine.
  4. Refrigerate at least 30 minutes before serving for flavors to combine.
