Apricot Delight Pie --Candlewick


  • Yield: 1 pie 1x

Ingredients

Crust

  • 4 oz vanilla wafers (crushed)

Filling

  • 2 1/2 cups apricots (canned works great)
  • 1 1/4 stick butter
  • 1 medium egg
  • 1 cup powdered sugar
  • 1/4 pint heavy whipping cream
  • 1/2 cup pecans

Instructions

Crust

  1. Crush vanilla wafers and form "crust" in the pie plate.
  2. Have ready before the filling is cooked.

Filling

  1. Melt butter and sugar.
  2. Beat the egg with a hand mixer and add to the butter and sugar.
  3. Cook on low heat until thick.
  4. Let it boil up good, but watch and stir carefully as it burns easily.
  5. Spoon, or pour carefully, over vanilla wafer crust.
  6. Place apricots (cut side down) across the pie.
  7. Sprinkle on the pecans.
  8. Chill. (Let stand overnight or all-day before serving.)
  9. Top with whipped cream when serving.
