Couscous Salad

Ingredients

Salad

  • 1 cup couscous (uncooked)
  • 1 1/4 cup boiling water
  • 1/2 cup red pepper (finely chopped)
  • 1/2 cup red onion (finely chopped)
  • 3/4 cup dried fruit, such as raisins
  • 1 small can mandarin oranges (reserve liquid)
  • 1 tbs ginger (finely chopped)
  • 1/2 tsp cinnamon (ground)
  • 1/2 tsp nutmeg (freshly ground)
  • 1/4 tsp salt

Dressing

  • 1/8 cup honey
  • 2 tbs soy sauce
  • 2 tbs vinegar
  • 1/3 cup juice from oranges
  • 1/2 tsp lemon or lime juice

Instructions

Dressing

  1. Mix all ingredients in a small bowl.

Salad

  1. Soak couscous in boiling water until the water is absorbed.
  2. Combine all the ingredients except dressing in a large bowl and mix well.
  3. Add the dressing and stir well.
  4. Allow to sit for 5-10 minutes before serving for flavors to be absorbed.
