Gumbo z' Herbes (Greens Gumbo)

  • Yield: 6 servings 1x


For keto: Omit the rice


  • 1/2 tsp salt
  • 1/2 tsp cayenne pepper
  • 2-3 ea bay leaves
  • 5 cups water
  • 2 pounds assorted greens (trimmed, washed and dried)
  • 2 tbs avocado oil
  • 2 cup onion (chopped)
  • 1/2 cup red bell pepper (chopped)
  • 1/2 cup celery (chopped)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 4 Tbs butter
  • Filé Powder (GARNISH)


  1. Put the salt, cayenne pepper, and bay leaves in a large deep pot and add the water.
  2. Bring to a boil over medium-high heat, then reduce the heat to medium and add the chopped greens.
  3. In a medium frying pan, heat oil over medium heat and add the onions, bell peppers, and celery.
  4. Cook, stirring often, until the vegetables are wilted and golden, about 10 minutes.
  5. Add the vegetables to the greens.
  6. Bring to a gentle boil and simmer for 1 1/2 hours.
  7. Remove the bay leaves.
  8. Add 4 Tbs. butter to the pot just before removing from the heat.
  9. Serve in deep soup bowls with filé powder passed at the table for guests to add to their personal taste.
  10. Serve over rice.
