Midnight Pan-cooked Breakfast (Fry-up)

You can also add black pudding to this dish to make it more traditionally English


  • 6-8 large crimini mushrooms (sliced)
  • 5 slices bacon (cut in half)
  • 5 medium grilling sausages (cut in half lengthwise)
  • 2-3 medium eggs
  • 2 medium tomatoes (cut into eighths)
  • 1/8 medium red onion (chopped)
  • to taste salt & pepper


  1. Heat the largest nonstick pan you have on high heat until hot.
  2. Add bacon and sausages and cook until beginning to crisp.
  3. Add the mushrooms and onions and cook until onions are soft.
  4. If there is not enough oil from the meat, add a little oil to cook the mushrooms.
  5. When the onion is soft, add tomatoes and ground pepper.
  6. Cook until tomatoes begin to soften.
  7. Add the eggs at different sides of the pan. Allow the whites of the eggs to dribble in and around the other ingredients and cook until the egg whites begin to set.
  8. Before serving, place the pan under the broiler and cook until eggs are to your desired doneness.
  9. If cooked in a nonstick pan, this will slide out onto a serving plate in one piece, or can be served individually on plates.
