Keto Banana Mini Muffins

Ingredients

  • 3 medium eggs
  • 2 cups bananas, soft (3-4 medium)
  • 1/2 cup almond butter
  • 1/4 cup butter or coconut oil
  • 1 tsp vanilla
  • 1/2 cup almond meal or coconut flour
  • 1 tbs cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/8 pinch salt
  • 1/2 cup nuts or fruit of choice

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease a muffin tin or use cup liners.
  3. In a large bowl, whisk or mix together eggs, banana, almond butter, butter, and vanilla.
  4. In a separate bowl, mix together the flour, cinnamon, baking powder, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and mix together with a spoon.
  6. Add the nuts or fruit and mix well but gently.
  7. Fill muffin cups to about 3/4 to almost full.
  8. Bake 15-18 minutes, until toothpick comes out clean.
  9. Allow to cool about 10 minutes before removing from pan.
