Ranger Cookies

Ingredients

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups oatmeal
  • 1 cup unsweetened coconut
  • 2 cups rice krispies cereal

Instructions

  1. Preheat oven to 375 degrees.
  2. Line a cookie tray with parchment paper or silicone baking sheet.
  3. In a small bowl, combine flour, baking powder, baking soda, and salt. Set aside.
  4. In a medium bowl, combine oats, coconut, and rice krispies. Set aside.
  5. In a large bowl, combine butter, brown sugar, sugar, and vanilla.
  6. Beat until creamy.
  7. Beat in eggs.
  8. Gradually add the flour mixture incorporating it well.
  9. Using a spoon, stir in the oatmeal mixture and mix well.
  10. Roll into small balls and flatten with your hand.
  11. Bake 10-12 minutes or until light brown.
  12. Cool 1-2 minutes on baking tray before removing to a cooling rack.
