Pumpkin-Pecan Bars

Ingredients

  • 1 stick butter (softened)
  • 1 cup firmly packed brown sugar
  • 1 1/2 cups flour
  • 1 cup oatmeal
  • 1 tsp baking powder
  • 1 tsp salt (divided in two)
  • 1 16 oz can pumpkin
  • 1 14 oz can sweetened condensed milk
  • 2 medium eggs (beaten)
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1 1/2 tsp vanilla
  • 1 cup pecans (chopped)
  • 1 tbs cilantro (chopped)
  • 1/8 cup toasted pumpkin seeds
  • Powdered Sugar (GARNISH)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a medium mixing bowl, beat butter and sugar until fluffy.
  3. Add the flour, oatmeal, baking powder, and half the salt.
  4. Mix until crumbly.
  5. Reserve 1 cup of the crumble mixture.
  6. Press the remainder on the bottom of a 10 X 15 pan.
  7. Bake 20 minutes.
  8. In a separate bowl, combine pumpkin, condensed milk, eggs, spices, vanilla, and remaining salt.
  9. Spread over crust.
  10. Combine the reserved crumble mixture and pecans and sprinkle over pumpkin mixture.
  11. Bake 25-30 minutes.
  12. Cool thoroughly.
  13. Dust with powdered sugar.
  14. Cut into bars.
