Midget Date Loaves


  • Yield: 4 loaves 1x

Ingredients

Scale
  • 1/2 cup boiling water
  • 8 oz pitted dates (chopped)
  • 2 tbs butter (melted)
  • 1 tbs grated orange peel
  • 1/2 cup orange juice
  • 1 medium egg (beaten)
  • 2 cup flour
  • 1/2 cup honey
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup nuts or choice (chopped)

Instructions

  1. Preheat oven to 325 degrees.
  2. Grease 4 miniature loaf pans.
  3. Pour boiling water over dates and butter.
  4. Cool to room temperature.
  5. Add the orange peel and juice.
  6. Stir in the egg and honey.
  7. Sift together flour, baking powder, soda, and salt.
  8. Add the dry ingredients to the wet mixture.
  9. Stir until just mixed.
  10. Add nuts.
  11. Turn into greased miniature loaf pans.
  12. Bake for 40 minutes.
  13. Allow to cool on rack before cutting.
