Kickin' Collard Greens

  • Yield: 4 servings 1x


  • 1 tbs olive oil
  • 3 slices bacon
  • 1/2 large onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 1 tsp pepper
  • 3 cups veggie broth
  • 1 pinch red pepper flakes
  • 1 pound fresh collard greens (cut into 2 inch pieces)


  1. Heat oil in a large pot over medium-high heat.
  2. Add the bacon and cook until crisp.
  3. Remove the bacon from pan, crumble, and return to the pan.
  4. Add the onion and cook until tender, about 5 minutes.
  5. Add the garlic and cook until just fragrant.
  6. Add the collard greens and fry until they start to wilt.
  7. Pour in the broth, season with salt, pepper, and red pepper flakes.
  8. Reduce heat to low, cover, and simmer for about 45 minutes or until the greens are tender.
  9. Serve with sport pepper or lime.
