Peaches and Cream Bread with Vanilla Glaze

Ingredients

Bread

  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 oz cream cheese (softened)
  • 1 cup sugar
  • 2 tsp vanilla extract
  • 1 large egg (beaten)
  • 1/2 cup vanilla Greek yogurt
  • 1/4 cup cream
  • 2 cups peaches (chopped into small pieces)
  • 1/2 tsp cinnamon (ground)
  • 1/2 tsp cardamom (ground)

Vanilla Glaze

  • 1 tbs butter (melted)
  • 1/2 cup powdered sugar
  • 1 tbs milk
  • 1/4 tsp vanilla extract

Instructions

Bread

  1. Preheat the oven to 350 degrees.
  2. Grease and sugar a bread pan.
  3. In a medium bowl, mix the flour, baking soda, salt, cinnamon, and cardamom.
  4. In a separate bowl, beat the eggs, sugar, cream cheese, cream, and vanilla until smooth.
  5. Slowly add the flour mixture to the wet ingredients, mixing until fully incorporated.
  6. Add the yogurt and mix just until combined.
  7. Stir in the chopped peaches.
  8. Pour the batter into the prepared bread pan and place in oven.
  9. Bake for 60-70 minutes or until a toothpick inserted in the middle comes out clean.
  10. Remove from the oven and cool in the pan for about 15-20 minutes.
  11. Then remove from the pan and let it cool on a wire rack.
  12. Once the bread is cool, add the glaze.

Vanilla Glaze

  1. Whisk all the ingredients together with a whisk.
  2. Drizzle the glaze over the bread.
