Slow Cooker Bahn Mi Pork (and Sandwich)

The pork is wonderful by itself, but in the sandwich it is delicious
This dish is traditionally made on a grill and the directions are included, but we find slow cookers useful in the summer.

  • 1-1 1/2 pound pork tenderloin
  • 3 tbs fish sauce
  • 2 tbs maple syrup
  • 1 tbs brown sugar
  • 2 tbs soy sauce
  • 1/2 tsp sesame oil
  • 2 cloves garlic (minced)
  • 1/2 slice ginger (minced)
  • 1 medium green onion (thinly sliced)
  • 1/2 tsp black pepper
  • 2 tbs oil


  • 1 loaf french baguette (or 4 french rolls (crispy outside, soft inside))
  • 4 leaves red lettuce
  • 4 sprigs cilantro
  • 1 tbs mayonnaise
  • 1 spoonful Do Chua (Pickled carrots and radish) (See recipe in link below)
  • 1-2 slices jalapeño peppers (OPTIONAL)



  1. Place tenderloin in slow cooker insert.
  2. Mix the marinade ingredients (from fish sauce to black pepper). Taste and adjust seasoning – it should be sweet and savory so add more soy, salt, or sesame oil as you like.
  3. Add marinade to the meat and use your hands or large spoon to make sure all pieces of meat are coated in marinade.
  4. Cover the slow cooker and cook on LOW for 5-6 hours.
  5. You do not want the meat to fall apart but you do want it tender.
  6. Remove from the slow cooker and allow to rest before slicing for sandwiches.


  1. You can cook the pork on the grill outdoors (most traditional) or indoors using a grill pan or cast iron pan, something that you can get very hot.
  2. Heat grill or grill pan to high and turn on that vent fan!
  3. Add the oil to meat and stir to coat.
  4. Sear the first side of meat until very dark brown on one side, then flip and sear on the second side.
  5. Be careful not to overcook it. The meat is thin so it cooks quickly, one or two minutes on each side.


  1. Slice the baguette or rolls and spread mayonnaise on one side.
  2. Add lettuce, meat, pickled vegetables, cilantro, and peppers.
