Herbed Grain Salad with Fruit

Description

Can be a vegetarian Main dish or side dish


Ingredients

Salad

  • 1 cup Pearl Couscous, barley, or farro (uncooked)
  • 1 1/4 cup water (Or according to package directions)
  • 1/2 tsp kosher salt
  • 1 cup spinach leaves or sorrel (tough stems removed, chopped)
  • 1/2 cup fresh dill (tough stems removed, chopped)
  • 2 cloves garlic (minced)
  • 1/2 cup walnuts, almonds, or hazelnuts (toasted, chopped)
  • 1 large pear (peeled, cored, diced)
  • 2 cups mushrooms (diced OPTIONAL)

Dressing

  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/4 tsp black pepper
  • 1/4 tsp dry mustard
  • 2 tsp honey

Instructions

Dressing

  1. Mix all ingredients in a small bowl.

Salad

  1. Cook grain of choice according to package directions.
  2. Allow the grain to cool until just warm.
  3. Add 2/3 of the dressing and stir well.
  4. Add the nuts, spinach, mushrooms (if using) and pear and mix gently.
  5. Add the remainder of the dressing and stir to coat.
  6. Allow to sit for 10 minutes before serving.
