Oatmeal Chocolate Chip Cookie


  • Yield: 36-40 cookies 1x

Ingredients

Scale
  • 1 cup shortening
  • 3/4 cup brown sugar (firmly packed)
  • 3/4 cup white sugar (OR 1/2 cup honey)
  • 1 1/2 cups unbleached white flour
  • 1/4 cup water
  • 1 medium egg
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 6 ounce chocolate chips
  • 2 cups oatmeal

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease cookie sheet or apply silpat baking sheet.
  3. Cream shortening in a large bowl.
  4. Add sugars and blend.
  5. Beat in egg, vanilla, and water.
  6. Un a separate bowl, mix together the dry ingredients except chocolate chips.
  7. Stir in the dry ingredient until thoroughly combined
  8. Add the chocolate chips
  9. Drop by the teaspoon onto the cookie sheet.
  10. Bake for 12-15 minutes.
  11. Remove from the oven and allow to sit on the tray for 3 minutes before moving to a cooling rack.
