Oatmeal Cranberry Walnut Cookies

Ingredients

  • 1 stick butter (softened)
  • 1/2 cup shortening
  • 1 cup white sugar
  • 1 cup brown sugar (firmly packed)
  • 2 medium eggs
  • 1 tsp vanilla
  • 2 cups flour
  • 2 cups oatmeal
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 cup cranberries (dried)
  • 1 cup walnuts (chopped)

Instructions

  1. Preheat oven to 350 degrees.
  2. Grease cookie sheet or apply silpat baking sheet.
  3. Cream butter, sugar, and shortening.
  4. Add the eggs and vanilla to mixture and incorporate until smooth and very thick liquid consistency.
  5. In a separate bowl, combine flour, oatmeal, baking powder, soda, salt, and cinnamon.
  6. Combine the wet and dry ingredients and mix well.
  7. Add the cranberries and walnuts and mix well.
  8. Drop the cookies mixture onto the baking sheet by the teaspoonful.
  9. Bake for 10-12 minutes.
  10. Remove from the oven, allow to sit for 1 minute, then remove to a cooling rack.
