Jewish Apple Cake from Bubba's Recipe Box

  • Yield: 12 slices 1x


  • 1 tsp ground cinnamon
  • 3/4 cup white sugar
  • 5 large apples (peeled, cored, chopped or sliced--Use any combination of juicy apples.)
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tbs baking powder
  • 4 medium eggs
  • 1 1/2 cups white sugar
  • 1/4 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 1/2 cup orange juice
  • 1 tbs vanilla extract
  • Creme Fraiche or Whipping Cream (OPTIONAL)


  1. Preheat oven to 350 degrees.
  2. Coat bottom and sides of 10 inch tube pan.
  3. Sugar or flour the tube pan and set aside.
  4. In a medium bowl, mix cinnamon, 3/4 cup of sugar, and apples.
  5. Set aside.
  6. In a medium bowl, combine flour, salt, and baking powder.
  7. Set aside.
  8. In a large mixing bowl, beat the eggs and 1 1/2 cups of sugar with an electric mixer until fluffy.
  9. Alternate mixing the flour mixture and the oil and applesauce into the egg mixture until well mixed.
  10. Using the mixture, beat in the orange juice and vanilla until smooth and thoroughly mixed ( it will be sticky like glue).
  11. Pour half of the batter into the tube pan.
  12. Layer 1/2 of the apples on top of the batter.
  13. Pour the remaining batter over the apples, then finish by topping with the remainder of the apples.
  14. Bake until a toothpick inserted into the center comes out clean, about 1 hour 30 minutes.
  15. Cool in the pan for 10 minutes.
  16. Remove to a cooling rack until completely cooled (or it will fall apart when you cut it, although I can usually not wait).
  17. You can drizzle any leftover apple liquid to add sweetness and a light sheen.
