The Best No-Bake Cookies-with Coconut

Description

This recipe is a little more gooey than some. You can make it less sticky by adding 1/2 cup peanut butter


Ingredients

Scale
  • 1/2 cup butter (1 stick)
  • 1 1/2 cup white sugar
  • 1/3 cup milk
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp vanilla
  • 1/4 tsp kosher salt
  • 3 cups old fashioned oats (or quick rolled oats. Not instant or steel cut)
  • 1 cup shredded coconut (can be sweetend or unsweetend depending on preference)

Instructions

  1. In a medium saucepan, bring butter, sugar, milk, cocoa powder, vanilla, and salt to a boil.
  2. Boil for 2 minutes, stirring continuously.
  3. Remove from the heat.
  4. Stir in the oatmeal and coconut and let cool for 5 minutes.
  5. Spoon 1-inch balls onto parchment paper or silpat. (a 1/4 cup measure works well or an ice cream scoop.
  6. Cool for 20 minutes or refrigerate until ready to eat.
  7. Store in an airtight container.
