Traditional Greek sauce or dip


  • 2 cup grated cucumber (no need to peel or seed, grate on the large holes of your box grater)
  • 1 cup greek yogurt (plain)
  • 1/2 cup bulgarian yogurt (plain--or use greek yogurt)
  • 2 tbs extra-virgin olive oil
  • 2 tbs fresh dill (chopped--can subsitute mint)
  • 1 tbs fresh lemon juice
  • 1 clove garlic (minced or pressed)
  • 1/2 tsp sea salt


  1. Working with a big handful at a time, lightly squeeze the grated cucumber between your palms over the sink to remove the excess moisture.
  2. Transfer the squeezed cucumber to a serving bowl and repeat with the remaining cucumber.
  3. Add the yogurt and olive oil and stir to blend.
  4. Add the dill or mint, lemon juice, garlic and stir to blend.
  5. Add 1/2 of the salt, stir to blend.
  6. Taste and add additional salt to desired taste.
  7. Let the mixture rest for at least 5 minutes to allow the flavors to meld.
  8. Tzatziki will keep in the refrigerator about 4 days.
