Cuban Avocado Citrus Salad with Honey Lemon Dressing

Description

To make this a main dish salad, add 1 15 oz can black beans, drained and rinsed, to the salad.


Ingredients

Dressing

  • 3 tbs olive oil
  • 1 large lemon, juiced
  • 1 tbs honey
  • 1/4 tsp ground cumin
  • 1/8 tsp granulated garlic
  • 1 pinch salt

Salad

  • 1 medium avocado (diced)
  • 1 medium head romaine lettuce (chopped)
  • 1/2 cup mixed baby greens (chopped)
  • 2 tbs cilantro (chopped)
  • 1/4 small red onion (sliced into half rings)
  • 1 medium orange (diced (we prefer blood oranges))

Instructions

Dressing

  1. Whisk together the olive oil, lemon juice, honey, cumin, garlic powder, and salt in a small bowl
  2. Set aside for at least 30 minutes.

Salad

  1. Place the lettuce, greens, red onion, and cilantro in a salad bowl and mix together.
  2. Top with the orange and avocado just before serving.
  3. Pour dressing over salad when serving.
  4. Sprinkle Tajín over the salad when serving
