Oatmeal Pancakes


  • Yield: 6 pancakes 1x

Ingredients

  • 1 tbs canola oil (or melted, cooled coconut oil)
  • 1/2 cup plain greek yogurt
  • 1/4 cup milk
  • 3/4 + 1/4 cups old fashioned oats (do not use steel cut or instant)
  • 1 large eggs
  • 2 tbs maple syrup
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon ground
  • 2 tsp baking powder
  • 1/4 tsp kosher salt
  • 1/4 cup mix-ins of choice (nuts, chcoclate chips, blueberries)

Instructions

  1. In a blender, combine oil, yogurt, milk, 3/4 cups oats, eggs, maple syrup, vanilla, cinnamon, baking powder, and salt.
  2. Blend until the batter is smooth and you don't see any remaining bits of oats.
  3. Stop the blender, then stir in the remaining 1/4 cup oats and any desired mix-ins. DO NOT blend again
  4. Let the batter sit for 10 minutes while you heat the skillet/griddle.
  5. Heat a large nonstick skillet or griddle over medium-low heat.
  6. Once the skillet is hot, drop the batter by 1/4 cupfuls into the pan
  7. Let cook gently for 3-4 minutes on the first side, until the pancakes look dry at the edges and small bubbles form on top.
  8. Gently flip, then cook on the other side for 1-2 minutes.
