Pineapple Slaw


  • Yield: 8 1/2 cup servings 1x

Ingredients

Scale

Salad

  • 1 20 oz can pineapple tidbits
  • 3 cups cabbage (shredded)
  • 1/4 cup slivered almonds
  • 3-4 ea green onions (chopped)

Dressing

  • 1/2 cup plain yogurt (we use Bulgarian)
  • 3 tbs apple cider vinegar
  • 3-4 tbs pineapple juice (from drained pineapple tidbits)
  • 1 tsp salt
  • 1/2 tsp cracked black pepper
  • 1/4 tsp red pepper flakes
  • 1-2 tbs brown sugar (can use more if you want it sweeter)

Instructions

Dressing

  1. In a small bowl or jar with a lid, add yogurt, vinegar, sugar, pineapple juice, salt, black pepper, and red pepper.
  2. Mix well.
  3. Set aside.

Salad

  1. In a large bowl, add cabbage, pineapple, almonds, and green onions.
  2. Pour dressing over cabbage mixture and toss until well coated.
  3. Sprinkle on more red pepper if desired.
  4. Cover and place in refrigerator to chill until ready to serve
  5. If not serving immediately, do not add the almonds until ready to serve to preserve their crunch
