Slow Cooker Pork Chops with Potatoes and Onions

Description

You can modify this recipe to make it taste like onion soup by adding 1 cup of shredded mozzarella cheese at the end.


Ingredients

Sauce

  • 1 cup hot water
  • 1/4 cup brown sugar
  • 1/4 cup white wine
  • 2 tbs soy sauce
  • 1 tbs ketchup
  • 2 sprigs fresh thyme (leaves stripped)

slow cooker

  • 2 medium onions (thinly sliced)
  • 5 medium potatoes (peeled and thinly sliced)
  • 2 pounds bone-in pork chops (about 8)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Spread the onions along the bottom of a 6-quart slow cooker.
  2. Layer the potatoes over the onions.
  3. Place the pork chops on top.
  4. Sprinkle generously with the salt and pepper.
  5. In a small bowl, combine the hot water, brown sugar, white wine, soy sauce, ketchup, and thyme leaves.
  6. Pour the sauce over everything in the slow cooker.
  7. Cover and cook on low for 6-8 hours.
  8. If desired, sprinkle the mozzarella cheese over everything.
  9. Cover and cook on high just until the cheese melts, about 20-30 minutes.
  10. NOTE: To develop more flavor, sear the pork chops before placing in the slow cooker.
