Pili Pili Beef Fried Rice

Ingredients

  • 2 tbs cocout oil
  • 1/2 pound beef sirloin or stew beef (cut into thin slices or small pieces)
  • 1/2 pound green beans (cut into 2-inch pieces)
  • 1 heaping tbs garam masala seasoning
  • 1-2 tbs garlic & ginger paste
  • 1/2 medium jalapeño (minced, seeds removed)
  • 1/2 cup shredded carrots
  • 3 large green onions (chopped)
  • 1/2 tsp salt
  • 1 1/2 cup white rice (cooked, refrigerated)
  • 2 tbs soy sauce
  • 1 medium lime, juiced
  • 1 medium avocado (sliced GARNISH)

Instructions

  1. Precook the rice: Rinse until water runs clear before cooking, then cook according to package directions. Refrigerate until ready to use.
  2. Heat the oil in a wok over medium high heat.
  3. Add the beef and cook untilt he beef is browned, about 2-3 minutes.
  4. Add the green beans and carrots, cooking until slighly softened, about 5 minutes.
  5. Lower the heat to medium and add in the garam masala, garlic, ginger, jalapeño, and half the green onions.
  6. Cook until the garlic is fragrant and begins to soften, about 1-2 minutes.
  7. Add the salt and mix well.
  8. Add the rice and soy sauce.
  9. Cook until the rice is warmed through, about 2-3 minutes.
  10. Serve topped with sliced avocado and the remaining green onions.
