Kachumber (Indian Cucumber Salad)


  • Yield: 4 servings 1x

Ingredients

Scale
  • 1/4 medium red onion (small dice)
  • 1/2 cup cherry or campari tomatoes (cut in half or quarters)
  • 1 large English or Persian cucumber (cut in 1/4 inch slices)
  • 1 small carrot (julienned or peeled strips)
  • 1 large red radish (sliced thinly)
  • 1 small jalapeno (seeded, membrane removed, minced OPTIONAL)
  • 2 tbs cilantro (chopped)

Dressing

  • to taste salt
  • 1 tbs fresh-squeezed lemon juice
  • 1/8 tsp black pepper
  • 1/8 tsp ground cumin

Instructions

  1. Place all the vegetables in a large bowl.
  2. In a small bowl, mix together lemon juice, salt, black pepper and cumin.
  3. Pour dressing over vegetables and mix well.
  4. Allow to sit for 20 minutes before serving.
