Apple Quick Bread

This is a dense, flavorful quick bread.


  • 1 1/2 cups all-purpose flour
  • 1 cup white sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs, room temperature
  • 1/2 cup canola or vegetable oil
  • 1/2 tsp vanilla extract
  • 1 cup apples, chopped and peeled
  • 1/2 cup walnuts, coarsely chopped
  • 1/4-1/3 cup milk (as needed)
  • Oil or spray oil (for pan) or parchment paper


  • Preheat the oven to 350º F.
  • Line a 8 X 4 or 9X 5 inch loaf pan with parchment paper or grease and flour/sugar the pan
  • In a medium bowl, mix together the flour, sugar, cinnamon, allspice, baking soda, baking powder, and salt.
  • In a small bowl, whisk together the eggs, oil, and vanilla.
  • Add the wet ingredients to the flour mixture, stirring until moistened. (NOTE: the batter will be thick but should not ball up like dough). If too thick, add a small amount of milk until the dough is slightly sticky.
  • Fold in the apples and walnuts.
  • Transfer to the prepared pan.
  • Bake until a toothpick inserted in the center comes out clean, about 50-55 minutes.
  • Cool in the pan for 10 minutes before removing to a wire rack to cool.
  • Store wrapped in plastic wrap after cool.
