Indian-Style Carrot Salad

Ingredients

Scale
  • 1 cups carrots, shredded
  • 1/3 cup unsweetened coconut flakes
  • 1/2 cup cilantro, chopped (can substitute mint and curry leaf)

Dressing

  • 1 tbs olive oil
  • 1/2 tsp cumin seed
  • 1 tbs rice vinegar
  • 1 tbs shredded ginger or 1/2 tsp ginger powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp honey

Instructions

Dressing

  • Mix all ingredients together until emulsified

Salad

  • Place carrots, coconut flakes, and cilantro in a bowl
  • Pour dressing over salad and mix thoroughly.
