Braised Beef Short Ribs

Ingredients

  • 3-4 pounds bone-in short ribs
  • 2 tbs coconut oil
  • 2 medium onions, cut into wedges
  • 1 cup vegetable broth
  • 1 cup tomato sauce
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper
  • 1 tsp ground ginger
  • 1/2 cup cider vinegar
  • 1 tbs brown sugar
  • 2 tsp paprika
  • 2 tsp curry powder
  • 3 cloves garlic, minced
  • 1 tbs ground mustard
  • 2 tsp salt
  • black pepper to taste

Instructions

  • Heat the oil in a large skillet on high heat until rippling,
  • Salt and pepper both sides of each rib, then gently place in the skillet.
  • Cook until brown on all 4 sides, then transfer to a large slow cooker.
  • Add the onions to the slow cooker.
  • In a small bowl, combine all the remaining ingredients and mix well.
  • Pour over the ribs.
  • Cover and cook on low for 6-8 hours or until the meat falls off the bone.
