Cilantro Lime Rice

  • 1 cup long grain white rice
  • 1 cup veggie broth
  • 2 tsp olive oil
  • 1 tsp salt
  • 1 tsp butter (optional)
  • 1 1/2 tsp fresh lime juice
  • 1 1/2 tsp fresh lemon juice
  • 1/4 cup cilantro, chopped
  • 1/2 tsp cumin seed
  • salt and pepper to taste


  • Heat the oil in a sauté pan over medium heat
  • Add the rice and cook until rice just begins to brown
  • Add the salt, pepper, and cumin seed and cook until the seeds begin to toast
  • In a measuring cup, mix water, lime and lemon juice together, then add to rice.
  • Add the cilantro and bring the water to a boil.
  • Lower the heat to simmer, cover and cook 20 minutes.
