Maple Glazed Carrots

Ingredients

  • 2 pounds carrots, halved or quartered
  • 1/3 cup walnuts, roughly chopped
  • 1/4 cup maple syrup
  • 2 tbs butter, melted
  • salt to taste
  • freshly ground pepper to taste

Instructions

  • Preheat the oven to 400 degrees.
  • Pat carrots dry with paper towels and place carrots on a baking sheet.
  • In a small bowl, whisk together maple syrup and melted butter.
  • Drizzle the maple syrup mixture over the carrots, reserving a small amount for later.
  • Season with salt and pepper and toss to thoroughly coat.
  • Place in the oven and bake for 20 minutes.
  • Add chopped walnuts and toss again to make sure they are incorporated and everything bakes evenly.
  • Glaze with the remaining maple syrup mixture.
  • Bake for another 10-15 minutes, until carrots are glossy and tender
  • Remove from the oven and garnish with sea salt.
  • Serve warm
