Spicy Masala Omelet

  • 3 medium eggs
  • 1/2 small onion, finely chopped
  • 1 medium Roma tomato or 8-10 cherry tomatoes, finely chopped
  • 1 green chili, finely chopped (OPTIONAL)
  • 2 tbs fresh cilantro chopped
  • 3/4 tsp Kashmiri Mirsh (or cayenne pepper) or to taste
  • 1/2 tsp turmeric
  • 3/4 tsp garam masala spice
  • Salt to taste
  • 2 tbs ghee or butter
  • 1 tsp fresh lemon juice (GARNISH)
  • Cilantro leaves (GARNISH)


  • In a mixing bowl or measuring cup, whisk the eggs.
  • Add the onions, chilies, cilantro, tomatoes, and spices.
  • Mix well.
  • Season with salt to taste.
  • Heat the ghee in a large non-stick frying pan or medium-high heat.
  • Pour the egg mixture into the pan, give it a quick swirl to make sure egg mixture is evenly distributed across the pan.
  • Cook the underside for a minute or two on medium heat until it sets and is lightly brown and crisp around the edges.
  • Flip the omelet over and cook for a further minute until crisp on the edges.
  • Season with lemon juice and serve with naan and sweet chili sauce (see link below).
  • Garnish with cilantro leaves when serving.
