Meatloaf with Mushroom Gravy

Description

This is a dense, hearty meatloaf


Ingredients

Meatloaf

  • 1 pound ground beef
  • 1 pound ground pork
  • 1/2 medium onion, chopped
  • 5 cloves garlic, minced
  • 1 medium egg
  • 1/2 cup plain bread crumbs
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 tbs dried oregano
  • 2 tbs dried basil

Topping

  • 3 tbs tomato paste
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 tbs olive oil

Gravy

  • 4 ounces mushrooms (Shiitake or baby portobello), cutin tinto small pieces
  • 1 clove garlic, minced
  • 1 tbs dark miso
  • 1/2 cup hot water
  • 1/2 cup veggie broth
  • 1 tbs gravy flour
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tbs butter

Instructions

Meatloaf

  • Preheat the oven to 375 degrees F
  • Mix all ingredients together until well combined
  • Shape into a loaf to fit your pan.

Topping

  • In a small bowl, mix together all the ingredients well until smooth.
  • Spread over the top of the meatloaf.

Gravy

  • In a small measuring cup, mix together the miso and hot water until thoroughly dissolved
  • Add the garlic and mushrooms and mix.
  • Pour into the dish surrounding the meatloaf with the liquid.
  • Bake for 1 hour.
  • When done, remove the meatloaf to a platter and keep warm
  • Pour the juice in the meatloaf pan into a saucepan and bring to a boil.
  • In a small bowl or cup, mix together the gravy flour and veggie broth until completely combined
  • Add the butter to the mushroom liquid, and stir until the butter is melted and incorporated.
  • Add the flour/broth mixture while stirring and bring to a simmer.
  • Cook until reach almost desired consistency, then remove from the heat. (It will continue to thicken).
  • Serve over meatloaf slices.
