Ground Beef Bulgogi Bowl

Description

This can also be made in the Instant Pot (a Pot in Pot recipe) but I generally make it on the stove


Ingredients

Scale

Rice

  • 1 cup white basmati rice, rinsed until water is clear and drained
  • 2 cups water
  • 1/2 tsp sesame oil
  • 1/2 tsp salt

Bulgogi

  • 1/2 tsp olive or avocado oil
  • 3/4 pound ground beef
  • 1/3 medium onion, sliced
  • 3 cloves garlic plus 3/4 inch ginger root or 2 tbs garlic ginger paste
  • 1 1/2 tbs brown sugar (OMIT if using Sweet Soy sauce)
  • 1/2 tsp sea salt
  • 1/2 tsp ground white pepper
  • 1/2-1 tsp Sambal Lelek chili paste (to taste)
  • 1 Tbs sweet soy sauce
  • 1/2 tsp soy sauce (or 1 /2 Tbs of not using sweet soy sauce)
  • 1/2 tsp Sesame oil
  • 1/2 Asian Pear, grated (save the other half for the bowl)

Bowl

  • 2-3 red radish, sliced (can substitute Daikon)
  • 1 medium carrot--in shreds
  • 1 green onion, cut on diagonal in slices
  • 1 small cucumber, sliced on diagonal
  • 3 leaves bok choy or Napa cabbage, chopped (hard stems removed)
  • 1 egg per serving, fried medium with crispy edges
  • 1 Tbs toasted sesame seeds (GARNISH)
  • 1/2 Asian Pear

Instructions

Rice

  • Place 2 cups water in a saucepan
  • Add sale and sesame oil
  • Bring to a boil, then add the rice.
  • Stir rice and cover.
  • Bring back to a boil, then lower the flame to low and cook for 20 minutes. (DO NOT lift the lid)
  • When done, fluff with a fork.

Bulgogi

  • In a medium sauté pan or frying pan, heat the oil on medium-high heat.
  • Add the onions and sauté until just beginning to clear.
  • Add the ground beef and cook until no longer pink. (Make sure to break into a ground meat consistency)
  • Add the ginger, garlic, salt, and white pepper and stir well.
  • Next add the soy sauces, sesame oil,  and Sambal Oelik and cook until the meat is cooked through. (If it is too thick, add a small amount of broth or water) and allow to simmer on low until the rice is done.

Bowl

  • Place a serving of rice in a bowl.
  • Place a serving of meat on top of the rice.
  • Add the vegetables and pear around the edges of the bowl
  • Top the meat with chopped green onions and toasted sesame seeds.
  • If desired, top with a fried egg.
