Carrot Cranberry Salad

Ingredients

Dressing

  • 1 1/2 Tbs olive oil
  • 1 1/2 tsp rice wine vinegar (if you want it slightly more tart, use white wine vinegar)
  • 1 tsp honey
  • 1 tsp orange zest
  • juice 1/2 orange

Salad

  • 3 medium carrots, peeled and shredded
  • 1/4 cup dried cranberries (or craisins)
  • 1/2 cup apples, finely chopped
  • 2 Tbs walnuts (optional)

Instructions

  • Place carrots, cranberries, and apples in a medium bowl.
  • Combine the dressing ingredients and mix well.
  • Pour the dressing over the salad and mix thoroughly.
  • Allow to sit in refrigerator until ready to serve.
  • Add walnuts before serving and mix into salad.
