Ina Garten Inspired Summer Sandwich

Description

You can substitute different flavored goat cheeses, although it is best if they are savory


Ingredients

Scale
  • 1 small loaf ciabatta bread, cut in half along side (so have 1 top and 1 bottom)
  • 1 small herbed goat cheese roll
  • 1 medium heirloom tomato, sliced medium
  • 1 small jar roasted red peppers
  • fresh basil leaves
  • thinly sliced salami or parma ham (OPTIONAL)
  • 1/4 small red onion, thinly sliced
  • salt and black pepper to taste

Instructions

  • Spread goat cheese on both sides of the bread to desired thickness
  • Salt and pepper both sides of the tomato slices
  • Place tomato slices on the bottom side of the bread on top of the goat cheese
  • Next sprinkle the onion slices across the tomatoes
  • Next add the roasted red peppers across the top of the tomatoes
  • If using, now add the salami or ham
  • Finally, top with the fresh basil leaves
  • Cover with the goat-cheese-covered top of the bread and press down slightly to make sure the goat cheese is holding all the ingredients.
  • Cut into quarters and serve with cold soup or chips.
