Creamy Cucumber Salad

Description

This makes a delicious sandwich. Sometimes I spread hummus on the toasted bread and then add the salad.

Ingredients

Dressing

  • 3 Tbs yogurt
  • 1 tsp mayonnaise
  • 1 Tbs fresh lemon juice
  • 1/4 tsp salt (we prefer pink himalayan)
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp oregano
  • 1 tsp dried dill or 1 Tbs fresh dill

Salad

  • 1/3 cup cucumber, thinly sliced
  • 1/4 cup carrot, finely diced
  • 1 Tbs sliced or slivered almonds
  • 2 dates, finely chopped
  • 1/4 cup arugula, chopped

Instructions

Dressing

  • Mix all ingredients until thoroughly combined and creamy

Salad

  • Put all ingredients in a medium bowl
  • Add dressing and toss

Serve as a side on on toast as a sandwich (my favorite)
