Crispy Parmesan Garlic Chicken

Description

One pan meal that can be made on the stove in a skillet or on a sheet pan in the oven


Ingredients

  • 2 large chicken breasts cut in half or 4 chicken thighs
  • 6 Tbs butter
  • 1/2 cup bread crumbs
  • 1/2 cup plus 1 Tbs parmesan cheese, grated
  • 1/4 cup flour
  • 2 cloves garlic
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Instructions

Breading

  • Melt 4 Tbs of butter in a shallow bowl.
  • In a separate shallow bowl, combine the bread crumbs, flour, garlic powder, onion powder, and 1/2 cup parmesan cheese.
  • Mix the breading until well combined.

Chicken

  • In a large skillet over medium heat, melt 2 tbsp butter.
  • Dip the chicken in the shallow dish of melted butter
  • Then dip in the breadcrumb mixture and place in the skillet.
  • Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout.
  • Set aside on a plate and keep warm
  • Add 2 tbs of the melted butter back into the skillet and sauté the minced garlic for a minute.
  • Add the chicken back into the pan and season with salt and pepper.
  • Heat chicken until cooked completely.
  • Turn off heat, top with 1 tbs parmesan cheese and serve immediately.

Alternatively:

  • Preheat oven to 425 º.
  • Add melted butter to a sheet pan.
  • Once the chicken is breaded, place it on the sheet pan
  • Bake in the oven for 20 minutes.
  • When chicken is cooked through, place briefly under the broiler to crisp the breading.
