Peanut Satay Dressing

  • 1/4 cup coconut milk
  • 2 Tbs lime juice
  • 2 1/2 tbs chunky peanut butter
  • 2 tbs peanut or avocado oil
  • 1 Tbs fish sauce
  • 1 clove garlic, roughly chopped
  • 1 tsp honey
  • 1 Tbs finely shredded carrot (optional)
  • 1/2 tbs roasted unsalted peanuts, chopped


  • Place all ingredients except the carrot and unsalted peanuts in a food processor and blend until smooth.
  • Remove to a medium bowl.
  • Add the chopped peanuts and carrot and combine until well-mixed.
  • Set aside until ready to serve.
