Crispy Fluffy Waffles

This waffle is versatile and can be modified to be fruit waffle or dessert waffle.

These can be cooked, frozen, and reheated in a toaster or toaster oven


  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 2 Tbs granulated sugar
  • 1/2 Tbs baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/8 cup unsalted butter (2 Tbs)
  • 3/4 cup whole milk
  • 2 Tbs vegetable oil
  • 1/2 tsp vanilla extract
  • 1 large egg, separated
  • 1 soft banana, mashed (OPTIONAL)  VARIATION
  • 2 Tbs Chocolate syrup (OPTIONAL)  VARIATION
  • 1-2 strips bacon, cooked but not crisp, cut into small pieces


  • In a large mixing bowl, whisk together the flour, cornstarch, sugar, baking powder, baking soda and salt.
  • Set aside
  • In a separate medium bowl, melt the butter.
  • Once it is melted, add in the milk and vegetable oil and stir until combined.
  • Next add in the egg yolk and vanilla and mix until well combined.
  • If using banana or chocolate, add it now and mix thoroughly.
  • Add the milk mixture to the flour mixture and combine to form a batter.
  • If using bacon, add it to the mixture now and mix well.
  • In a clean small bowl, use an electric mixer to beat the egg white for 1-2 minutes until light, fluffy, and forms stiff peaks.
  • Use a spatula to gently fold the egg white into the batter until about 90% combined. You want to still see some streaks of egg whites
  • Spray the waffle iron with nonstick cooking spray.
  • Scoop batter into the preheated waffle iron. The batter will be thick and a little lumpy, so you want to help spread it to the edges
  • Cook until golden brown (4-6 minutes)
