Pork Souvlaki

Ingredients

  • 14 ounces pork, cut into 1 inch chunks
  • 1 tbs olive oil
  • 1/2 tbs dried oregano
  • 1 lemon, zested and juiced
  • 1/2 tsp hot paprika
  • 3.5 ounces yogurt
  • 1 clove garlic, grated
  • 1/2 cucumber, traimmed and grated
  • 2 red peppers, cut into chunks
  • chili sauce (OPTIONAL) Garnish
  • Butter lettuce leaves for serving

Instructions

  • In a small bowl, mix together oil, oregano, lemon zest, lemon juice, and paprika plus a good pinch of salt.
  • Pour over the pork and mix until pork is coated.
  • Set aside to marinate for at least 10 minutes.
  • In a separate bowl, combine the yogurt, garlic, and cucumber otgether.
  • Season with sat and set aside.
  • Heat the grill to high (if using)
  • Thread the marinated pork and peppers on skewers, alternating between the pork and peppers as you go.
  • Place on a baking sheet and either grill for 3-4 minutes on each side or place in very hot oven (450-475) and bake for 5-7 minutes, turning once half way through.
  • Serve with the lettuce, yogurt mixture, and chili sauce.
