Parmesan Tomato Zucchini Bake

Ingredients

Scale
  • 1 medium zucchin, sliced
  • 1 medium yellow squash, sliced
  • 2 medium Roma tomatoes, sliced
  • 1/2 cup parmesan cheese, shredded
  • 1/2 tsp black pepper
  • 1/2 tsp garlic pwoder
  • 1/2 tsp dried onions
  • 1/2 tsp majoram
  • 1/2 tsp basil
  • 1 tsp olive oil
  • salt to taste

Instructions

  • Preheat the oven to 375º F
  • Place squashes and tomatoes in a bowl
  • Add olive oil, seasonings, salt and pepper and toss well to coat
  • In a baking dish, arrange the zucchini, yellow squash, and tomatoes in an alternating pattern standing up on their edges
  • Top with the parmesan cheese and sprinkle the top with a little salt and pepper
  • Place the dish in the oven and bak, uncovered, for 25-30 minutes or untilt he squash is tender
  • Serve hot and enjoy!
